Additive E 450 has the structure of a white crystalline powder or granules. Phosphates have the properties to increase the emulsifying and moisturizing abilities of muscle fibers in the processing of meat products. This leads to improved organoleptic characteristics and slows down oxidative processes.
Pyro phosphates are an integral part of insecticides and detergents. In the food industry they are added in the production of canned meat due to their bactericidal and antioxidant properties. In some cases they are used in the production of dairy products. Also as a substance that prevents the formation of corrosion. It is rarely added to some types of pectins.
The use of E 450 in canned meat helps to improve the structure of the filling, as well as the stability of the emulsion when cooking meat.
Excessive consumption of products containing the supplement can disrupt the ratio between calcium and phosphorus in the body. Excess phosphorus impairs the absorption of calcium, which in turn leads to the development of osteoporosis.
The substance is considered to form cancer and increase cholesterol levels.
The permissible daily dose is 70 mg / kg.
