Food additive E 622 or monopotassium glutamate are crystals or crystalline powder of pure white color. It has no pronounced odor, taste is characteristic, solubility in water is good, low solubility in ethanol. Potassium glutamate is obtained by microbiological synthesis.
The additive E 622 is sometimes used to enhance the taste and aroma of dry broths, many culinary specialties and products, semi-finished products and all kinds of chips, rusks, canned meat and fish. But sodium glutamate is most often used for such purposes.
The human body absorbs the substance as a nucleic acid, absorbs it and processes it. The supplement can cause side effects and disorders in the form of nausea, diarrhea, colic, weakness and poor health in people prone to allergic reactions or with a poor digestive system.
The maximum amount of potassium glutamate that can be taken daily is 120 mg per 1 kg of body weight. In ready-made soups, broths and some other products the content of E 622 reaches 10 g / kg.
