But we propose to move away from the usual dishes and create a new menu for Easter. Of course, we will also leave the traditional ingredients - baking, sandwiches with red caviar and appetizer salad "Monastyrskaya Izba". True, we will try to present them in a new way. Serve fragrant duck in mulled wine marinade for a hot dish. To it - a fresh salad of arugula, parmesan and pomegranate seeds. We will complement the table of appetizers with a jellied pie with asparagus and a colored minced chicken casserole. For dessert - cottage cheese Easter with white chocolate and strawberry air pillows. We did not forget about table decoration - sprouted seeds in egg shells, which, moreover, will serve as a fresh seasoning for dishes.
Seeds germinated in egg shells will be a wonderful decoration for the table for Easter. In addition, guests can pinch off their favorite spice and spice up a salad or hot dish. When preparing Easter pastries and salads, you will probably use eggs. Try to break the eggs closer to the tip, then rinse the shell and, if desired, paint with gouache (or leave it to the children). Pour the seeds onto a cotton swab embedded in the shell and add a couple of tablespoons of water. So you can germinate unroasted seeds, seeds of beets, watercress, wheat, mung bean, lentils, oats, rye, buckwheat. Buy seeds from garden supply stores or pharmacies. In spring, large stands with seeds appear in supermarkets. Expect the first harvest in 24 hours, but it is better to take care of this 2-3 days before the holiday.
Favorite sandwiches with caviar on white fermented bread or long loaf, we offer to arrange in the form of a carrot. Making carrots from caviar is as easy as shelling pears, all that remains is to attach a tail from any greenery. By the way, guests can put napkins in a paper hare. Print a bunny template from the Internet on colored paper, draw or glue eyes and a nose, make a couple of cuts on the body for a napkin. Bunny can be signed with the names of guests or write wishes on them. Such work, by the way, you can keep the children busy while you are busy in the kitchen.
Colored eggs can be served not in a traditional basket, but in an Easter wreath made of dough. Knead the yeast dough according to a proven recipe and bake several or one large "wreath". Beautiful, simple, and even eatable. White eggs can simply be boiled and then tied with a bright lace ribbon or a sticker. Eggs in clothes made of thin material or crocheted also look beautiful.
A simple asparagus pie can be made with just three ingredients - ready-made puff pastry, grated cheese and asparagus. But we chose a more juicy option - with a fluffy and delicate filling of eggs and milk.
To make the asparagus pie you will need:
140 g flour 90 g butter 200 g hard cheese (90 g of which for the dough) 5 eggs 180 ml milk 300 g peeled asparagus
1. Rub the flour with your hands with butter in a large bowl. You will get a big crumb. Add 90 g grated cheese and 3 tbsp. spoons of cold water, knead the dough, then form a ball, wrap with cling film and refrigerate for 5 minutes.
2. Butter a rectangular tart dish. Sprinkle the table with flour and roll out the dough to the size of the form. Send the dough in the form for 20 minutes in the freezer. Then cover the dough with parchment paper, forming the sides, pour in the peas. Bake at a temperature of 180 degrees for 15 minutes, another 10 minutes you need to bake the base without paper and peas - remove them.
3. In a bowl, beat the eggs, add milk and whisk again. Spread 50g grated cheese over the baked pie base, top with the asparagus, top with the egg mixture and sprinkle with the remaining cheese. Bake for another half an hour (or until the egg mass is firm) on the bottom rack of the oven. Sprinkle the finished cake with freshly ground black pepper.
For such an airy, but satisfying treat, you will need:
12 pcs. crab sticks 200 g hard (or processed) cheese 1-2 garlic cloves mayonnaise 2 boiled eggs or more hard cheese to sprinkle on top
Grate the cheese on a fine grater, mix with garlic and mayonnaise passed through the press. Peel the crab sticks from the film and throw them into a pot of hot water for 40 seconds, they will swell. Select sticks with a slotted spoon and unfold them. For each unfolded stick, distribute a tablespoon of the filling along one edge and roll it up. Put five tubes on a flat dish in the first layer, grease the surface with mayonnaise, then lay four more tubes on top, again mayonnaise. Finish with three tubes and lightly grease the entire "hut" with mayonnaise. Sprinkle with grated boiled eggs or grated cheese.
Airy and tender chicken casserole is a wonderful appetizer or light hot dish for Easter. Such a casserole is prepared from minced chicken, onions, milk cream and spices. For color, add carrots and spinach. Onions will need to be fried, and then we mix the ingredients in a blender. We select one part of the minced meat and put it in a baking dish, set aside the second for a short time, and scroll the third again with carrots. We puree the reserved part of the minced meat with spinach, form the missing layers and bake in the oven.
A light salad fits perfectly into the spring Easter menu. Put a bunch of arugula on a large dish, cut off layers of parmesan with a paring knife, add pomegranate seeds and a few coarsely chopped walnuts. Serve salad with olive oil, salt and pepper. Simple, bright and won't run.
Serve the duck in mulled wine marinade for a hot dish. Juicy duck meat, saturated with the aroma and taste of wine, will surely please guests. Of course, the time for marinating and roasting the duck (or its parts, if you use them) will take a fair amount, but the result will be beyond praise. Start marinating duck in the evening and allow two hours for baking in the oven on Easter morning. Duck is traditionally served with sweet sauces or jam.
Cottage cheese Easter with white chocolate looks incredibly beautiful! Please note that it will take 11 hours to prepare such an Easter. Easter is prepared according to the classic recipe and poured into a special form. You can add dried fruits, candied fruits or colored marmalade cut into pieces. Pour the finished dessert with white chocolate melted in a water bath and decorate with confectionery sprinkles.
From frozen strawberries (which, by the way, can be found in large supermarkets), powdered sugar, lemon juice and gelatin, you can prepare an original dessert in the form of pink clouds. Ingredients, except for gelatin, need to be beaten with a blender, then warmed up with gelatin, cooled and beat again until fluffy. Pour the resulting sweetness into a mold and leave for a day (!) at room temperature. It remains only to cut the dessert into squares and sprinkle with powder.
