Fresh Three-ingredient Salads For The New Year

A hearty and plentiful table with numerous meat and fish dishes sometimes just asks for some simple and light salad.

A hearty and plentiful table with numerous meat and fish dishes sometimes just asks for some simple and light salad. We have prepared over 20 simple recipes for such salads.

 

Apple-carrot salad

4 apples, 2 carrots, 50 g walnuts, for dressing - 50 ml of homemade mayonnaise or sour cream.

Grate an apple and carrots, you can add half a teaspoon of sugar, season with mayonnaise / sour cream, mix.

sauerkraut salad

300 g of sauerkraut, 1 onion, 50 g of boiled beans, for dressing - 60 ml of vegetable oil.

Cut the onion into half rings, squeeze the cabbage. Mix them, add boiled beans, season.

chicken salad

400 g of boiled chicken meat, 3 fresh cucumbers, 150 g of corn, for dressing - homemade mayonnaise, sour cream, cheese sauce.

Cut the meat into small pieces, cucumbers into small cubes. Mix them, add corn, salt and season.

egg salad

4 eggs, 2 fresh cucumbers, 6 crab sticks, for dressing - homemade mayonnaise or sour cream whipped with vegetable oil and pepper.

Hard boil eggs, peel and cut into cubes. Finely chop cucumbers. Grate crab sticks. Mix ingredients, salt and season. You can add fresh herbs if you like.

cabbage salad

 

350 g of white cabbage, 2-3 tomatoes, 100 g of crackers, homemade mayonnaise for dressing.

Finely chop the cabbage, cut the tomatoes into thin slices, salt, mix and season. Add croutons without mixing too much so as not to soften.

Chicken salad with grapes

350 g chicken fillet, 250 g seedless grapes, 4 stalks of celery, for dressing - beat lemon juice with pepper and 1 tsp. vegetable oil.

Boil the meat, finely chop, salt, add chopped celery and grapes, mix, season.

Chinese cabbage salad

400 g Chinese cabbage, 4 tomatoes, 6 quail eggs, for dressing - any cream sauce or vegetable oil with lemon juice.

Hard-boiled quail eggs (3-4 minutes in boiling water), peel and cut in half. Wash the cabbage leaves, dry, tear with your hands. Tomatoes cut into cubes. Mix all ingredients, salt and season.

fruit salad

 

3 bananas or kiwi, 2 canned peaches, half a can of canned pineapple pieces, for dressing - yogurt without sugar and additives.

Cut bananas or kiwi into slices, peaches into slices. Mix them, add pineapples without syrup, season with yogurt.

beetroot salad

2 beets, 100 g walnuts, 1 pomegranate, for dressing - any refined vegetable oil.

Boil the beets, peel and grate. Roast the nuts in a dry frying pan. Peel the pomegranate, select the grains. Mix ingredients and season.

You can add a pinch of sugar and/or salt to this salad.

Salad "Quick"

150 g of Korean carrots, 1 can of canned beans, 100 g of rye crackers, mayonnaise or sour cream for dressing.

Drain the liquid from the beans, pour it into a bowl, send Korean carrots and croutons there, season and mix. Salt is not necessary!

radish salad

 

2 white radishes, 1 carrot, 50-70 g of fresh cranberries, for dressing - 30 ml of olive oil, 5 ml of lemon juice and pepper to taste, beat with a fork until emulsified.

Peel and grate vegetables, add cranberries, season, mix.

Mushroom salad with citrus

1 can of pineapple slices, 1 grapefruit, 300 g of champignons.

Put the pineapples and some of the liquid from the jar into a bowl. Peel grapefruits, cut into small pieces, and washed and dried champignons into quarters. Mix and refrigerate for 7-8 hours. Citrus juice should soak the mushrooms well.

Salad with oatmeal

60 g oatmeal, 2 cucumbers, 2 tomatoes, for dressing - 20 ml of olive oil.

Cut vegetables into small cubes, salt and mix. Let stand 10 minutes, then add cereal and season with olive oil.

Salad with squid

 

300 g of squid, 200 g of Chinese cabbage, 1 apple, for dressing - mayonnaise, cheese sauce or sour cream.

Boil squids, peel, cut into half rings. Tear Chinese cabbage with your hands. Grate the apple. Mix the ingredients, salt a little, pepper and season.

Salad "Red"

3 large red bell peppers, canned red beans, 5-6 cherry tomatoes, olive oil for dressing.

Drain the liquid from the beans and place in a salad bowl. Remove the stalks from the bell peppers and cut into circles, and divide the cherry tomatoes into halves. Send vegetables to the beans, salt, pepper and season. Then mix, if available, you can add a few drops of wine vinegar.

cabbage salad

200 g of white cabbage, 200 g of red cabbage, 1 carrot, vegetable oil for dressing.

Chop cabbage, grate carrots, mix vegetables, salt and season.

Salad "Lenten"

 

1 can of canned beans, 4 tomatoes, 120 g of salted crackers, for dressing - vegetable oil or lean mayonnaise.

Drain the liquid from the beans, cut the tomatoes into small cubes, mix them, add croutons, season.

Salad "Spicy"

 

200 g of Korean carrots, 2 bell peppers, 20 g of sesame seeds, for dressing - 10 ml of soy sauce.

Remove the stalks from the peppers, cut them into strips, put them in a salad bowl along with carrots. Sprinkle with sesame seeds and pour over soy sauce, mix thoroughly.

Cucumber salad with olives

4 cucumbers, half a can of olives, 1 lemon or grapefruit, vegetable oil for dressing.

Cucumbers cut into strips. Remove the pits from the olives and cut them in half. Peel the citrus completely and cut into small pieces. Mix ingredients and season.

Salad with arugula

 

2 persimmons, 100 g walnuts, 80 g arugula, for dressing - 60 ml of refined vegetable oil.

Roast the nuts in a dry frying pan, cool, chop. Wash and dry the rocket. Cut persimmon into thin slices. Mix all ingredients and season. Salt is not necessary!

By the way, instead of nuts, you can add pickled cheese! Delicious!

Cabbage-corn salad

1 can of canned corn, 200 g of white cabbage, 2 cucumbers, for dressing - sour cream or mayonnaise.

Drain the liquid from the corn, send to a salad bowl. Shred the cabbage. Cucumbers cut into small cubes or straws. Mix, salt and season.
