Salted herring is an integral part of the traditional Russian feast. Everyone knows the great culinary combination of this fish with vinegar and half-ringed onions. But, perhaps, for many it will be a discovery that her ability to create delicious tandems has not been exhausted on this.

 

Stuffed loaf

1 loaf, 1 slightly salted herring, 2 eggs, 150 g butter, 100 g melted cheese, greens.

The loaf is not needed fresh, it must lie down for a day. Then it can be used for stuffing: cut lengthwise into equal parts, remove the crumb, but do not throw it away, but put it in a separate bowl. The result will be 2 bread "boats", cover them with softened butter. Remove all excess from the herring, so that only 2 fillets remain, put them in one of the halves of the loaf with a jack (the narrow tail side of one part of the fish is located at the wide side of the other).

Peel hard-boiled eggs, cut in half, place them in the second "boat", convex parts up.

Put the broken cheese into a bowl with the crumb, if there was caviar or milk in the herring, then add it, knead until a homogeneous mixture is obtained. Cover both halves of the loaf with fillings from the inside with it and connect them as tightly as possible. Then wrap this huge sandwich with cling film, send it to the refrigerator. He should be there for about 10 hours.

After taking it out, cut it into pieces 1.5-2 cm thick, arrange on a dish and decorate with herbs.

 

norwegian sandwich

1 spicy salted herring, 1 whole grain or rye baguette, 1 lemon, 1 cucumber, 80 g butter, 5-6 lettuce leaves.

Cut the baguette into pieces 1 cm thick, grease them with oil. Wash lettuce leaves, dry them, tear with your hands into pieces close in size to future sandwiches and put 2 pieces on bread. Cucumbers cut into circles and place on top of the greens. Peel the lemon and cut into slices.

Spicy salted herring is usually already divided into portions, but if this is not the case, then it should be cut into small slices and put on top of the vegetable. The sandwich ends with a slice of lemon.

Stuffed cucumbers

1 herring, 200 g fish fillet, 6 large fresh cucumbers, 10 ml vinegar, 1 hard-boiled egg, 30 g butter, 10 g horseradish, 40 g cream, green onions.

Boil the fish fillet, chop, add horseradish, butter, finely chopped egg, chopped herring into small pieces, mix.

Cut cucumbers in half, remove seeds from them. Instead, put a teaspoon of the fish mixture, sprinkle with chopped green onions.

Rolls with potatoes and herring

 

0.5 kg of potatoes, 1 herring, 2 nori, 100 g of Korean-style carrots, 100 g of butter, 50 ml of sour cream.

Boil potatoes in salted water, crush with butter. Peel herring completely from bones, skin, tail and fins, cut into long thin strips.

Divide nori in half, place on a special mat for making rolls (in extreme cases, a clean bamboo napkin will do). Put the pressed algae with the rough side up, spread over the surface of the puree, without occupying 2 cm from the far edge. Place the herring and carrots on top. Roll the nori with a mat/napkin, press it down a little and refrigerate for half an hour, then cut into pieces 3-4 cm wide using a sharp knife dipped in water.

 

Forshmak with apple

2 herrings, 1 apple, 1 onion, 3 slices of white bread, 50 ml sunflower oil, 2 eggs.

Peel the fish, pass through a meat grinder or blender, add bread soaked in water, grated eggs, onion, apple. Pour in the oil and stir until smooth.

Serve on black toasted bread with sprigs of greens.

Rollmops

0.5 kg of herring fillet, 1 onion, 2 apples, 85 ml of sour cream, 45 g of tomato paste, 30 g of sugar, 80 ml of vinegar, 30 ml of vegetable oil, 5 g of cinnamon and cloves.

Mix grated onion and 1 apple, add 1 tbsp. tomato paste and 1 tsp. sugar. Lightly beat off the fillet, cover with the previously prepared mass, roll into tubes and place in a deep bowl. Cut the second apple into thin slices and put on top.

In a separate container, mix half a glass of boiled cold water, vinegar, vegetable oil, the remaining sugar and tomato paste. Pour the fish with an apple with the resulting liquid, send the bowl to the refrigerator for two days, covered with a lid. Before serving, drain the marinade, put the rollmops on a plate, place an apple around the edges, season them with sour cream.

 

Omelet canapes with herring

4 eggs, 4 potatoes, 1 herring, 60 ml vegetable oil, 2 garlic cloves, 100 g dill, 30 g salt, 40 g soft cheese.

Peel the potatoes, cut into slices and fry so that it does not become covered with a dense crust. Then mash it as much as possible with a fork or crusher. Beat eggs with salt and crushed garlic. Pour the puree with the resulting mixture, mix and put on a wide frying pan, carefully, without disturbing the structure, fry the potato omelette on both sides. Then cut it into triangles.

Finely chop the dill. Peel the herring, chop, mix with herbs, add cheese. Spread half of the chopped omelette pieces with fish mixture, cover with the same triangles on top and secure with a skewer.

Hot sandwiches with herring

3 herring, 4 eggs, 400 ml milk, 60 ml vegetable oil, 80 g butter, 50 g mustard, 1 loaf.

Peel the herring, cut into slices and pour milk for 1 hour. Cut the bread and fry in butter. Hard-boil the eggs, remove the yolks, grind them with mustard and vegetable oil. Lubricate the croutons with the resulting mixture, put 1-2 slices of fish on top. Immediately before serving, send them to the preheated oven for 5 minutes.

Pancake rolls with herring

2 pancakes, 50 g hard cheese, 1 herring fillet, 200 g soft cheese, 50 g celery greens.

Grind celery and mix with soft cheese. Lubricate the pancakes with the mixture, place the fish on top, sprinkle with grated hard cheese. Roll up the rolls and leave for 15-20 minutes. Then cut into pieces 3 cm thick.
