1. Yeast pies in the oven

 

The recipe for the perfect yeast dough for wind pies with your favorite toppings!

You will need:

300 ml of warm milk; 650 g flour; 70 g of softened butter; 10 g yeast; 1 egg; 0.5 tsp salt; 2 tbsp. l. Sahara; favorite filling; 1 egg yolk.

Dissolve yeast in warm milk, add sugar and 2 tbsp. l. flour. Leave in a warm place for 15 minutes until foamy.

Sift flour with salt into a deep bowl, make a well. Pour in the dough and lightly beaten egg, mix and add the oil. Knead a soft dough, this will take about 10 minutes.

Round the finished dough, place in a bowl greased with oil, tighten with cling film and leave in a warm place for 1.5 hours. The dough will increase in volume by 2-3 times.

In the meantime, you can work on the filling. For example, fry finely chopped onions in a pan, add minced meat, salt, pepper, your favorite spices and bring to readiness. You can boil eggs and combine them with fresh herbs (parsley, dill, green onions), salt, pepper.

When the dough has risen, punch it down and divide it into equal pieces weighing 50 grams. Cover the dough with cling film to keep it from drying out.

Roll each piece of dough into a cake, put the filling in the center and form a pie of the desired shape. Put the pies on a baking sheet covered with parchment, cover with cling film, leave for 30 minutes.

Lubricate the pies with yolk, whipped with 1 tbsp. l. water, and bake at 210 degrees for 12-15 minutes.

2. Fried pies with cabbage

 

Soft thin dough and juicy filling... Very tasty!

For cooking, you need the following ingredients:

25 g fresh yeast; 1 tsp Sahara; 2-3 pinches of salt; 1 pinch of black ground pepper; 1 st. (250 ml) warm water; 1 egg; 1 tsp table 9% vinegar; 4-5 art. flour; 1 small head of cabbage; 1 onion; 1 carrot; 2 tbsp. vegetable oil; greens to taste.

Let's prepare the filling first. Peel the onions and carrots, chop the onions, grate the carrots and fry in vegetable oil until half cooked. Then add finely chopped cabbage and fry over low heat until fully cooked. Add a pinch of salt, sugar, black pepper.

Let's take a test. Put the yeast, salt, sugar, egg into a deep bowl. Pour in 1 cup of warm water and vinegar, mix. In parts, enter flour. The dough should be soft, no need to hammer it with flour. Let the dough stand in a warm place for 20 minutes.

Pinch off a small piece from the dough, stretch it with your hands on a surface greased with vegetable oil into a small oval, lay out the filling and form a pie.

Let the pies rise for 10 minutes and start frying. Fry the pies in a deep frying pan with oil over low heat, turning constantly so that the pies do not burn.

3. Wind pies with mushrooms and rice

 

To make these pies you need:

200 ml of milk; 2 eggs; 1 st. l. Sahara; 1 tsp salt; 7 g dry yeast; 50 g butter; 5 st. l. vegetable oil; 450 g flour; 3 art. l. rice 200 g of champignons; 1 bulb.

In a bowl, pour warm milk, melted butter and 1 tbsp. l. vegetable oil. Add 1 egg and dry yeast, mix.

Then add salt, sugar, sift the flour in parts and knead a soft dough that does not stick to your hands.

Place the dough in a bowl, cover with cling film and leave in a warm place for an hour. Punch down the risen dough and let rise again.

Pour 4 tbsp into the pan. l. vegetable oil and fry the chopped onion until golden brown, add the chopped mushrooms and simmer until tender.

Boil the rice and add to the mushrooms, salt and mix.

Divide the dough into 15 equal pieces, roll each into a circle and put 1 tbsp in the center. l. fillings. Shape into patties and place on a baking sheet lined with parchment paper and let rise for 30 minutes.

Lubricate the pies with an egg and bake at 180 degrees for 30-35 minutes.

4. Pies with chicken from curd dough

 

Very tasty and soft fried pies.

Ingredients:

125 g of cottage cheese; 100 g flour; 1 egg; 0.5 tsp Sahara; 1 tsp salt; 0.5 tsp soda; 250 g chicken fillet; 50 g of cheese; 20 g butter; 2-3 tbsp. l. vegetable oil; green onions; ground black pepper.

Put the cottage cheese in a deep bowl and rub with a fork with salt and sugar. Add egg, flour and soda, knead soft dough. Cover with cling film and leave for 20 minutes.

Cut the chicken fillet into small pieces and fry in vegetable oil. It is not necessary to fry the meat, it is enough to make the meat turn white. Salt and pepper to taste.

Add chopped green onions and grated cheese to the breast, mix.

Divide the dough into 8 parts, roll each part into a circle, put the filling in the center and form pies.

Fry the pies in a preheated pan on both sides until golden brown.

5. Classic apple pies

 

Fragrant and airy pies with apples are suitable for an afternoon snack and breakfast.

For cooking you need:

2 eggs; 500-600 g flour; 1 st. Sahara; 1 tsp salt; 100 g butter; 3 art. l. vegetable oil; 300 ml of milk; 1 st. l. dry yeast; 400 g of apples; 2 tbsp. l. corn starch.

Sift flour into a bowl twice, add salt.

In a separate bowl, pour warm milk and dilute the yeast, add 3 tbsp. l. sugar and 1 egg.

Pour the dough into the flour and mix, then add the melted butter and vegetable oil, knead the soft dough. Transfer the dough to a bowl, cover with a towel and let rise, up to 2 hours.

For the filling, cut the apples into small cubes and mix with starch.

Pinch off a small piece from the dough, roll it into a circle and put the filling in the center, sprinkle with 1 tsp. sugar and shape into a patty. Thus, prepare all the pies.

Lay the patties on a parchment-lined baking sheet, seam side down. Lubricate with an egg and send to the oven, preheated to 170 degrees, for 20-25 minutes.

6. Patties with cottage cheese and dill

 

Very tasty and fragrant pies are suitable for broth and as an independent snack.

For test:

1 egg; 0.5 st. vegetable oil; 0.5 tsp salt; 10 g baking powder; 0.5 st. kefir or yogurt; 1 bunch of dill; 2.5 st. flour.

For filling:

70 g of cottage cheese; 70 g of cheese.

For greasing and sprinkling:

1 yolk; sesame.

In a deep bowl, combine kefir with egg and vegetable oil. Add salt, chopped dill, flour and baking powder. Knead plastic dough.

For the filling, grate the cheese and combine with cottage cheese.

Divide the dough into 16 equal pieces. Knead the dough into a cake, put the cottage cheese in the center and close the edges.

Put the pies on a baking sheet covered with parchment, brush with egg, sprinkle with sesame seeds and bake at 180 degrees for 30 minutes.

7. Meat pies or goshkiide

 

Delicious pies made from tough dough with meat of Kyrgyz cuisine.

For cooking you will need:

250 g ground beef; 1 onion; 100 ml of water; 300 g flour; 50 g butter; salt, pepper to taste.

Pour water into a bowl, add 1 tbsp. l. melted butter and 1 tsp. salt. Add the sifted flour and knead into a stiff dough.

Add minced onion, salt and pepper to minced meat.

Divide the dough into 6 pieces and shape into a patty. In the center of the cake, put 2-3 tbsp. l. toppings and shape into round patties.

Bake pies for 25-30 minutes at 180 degrees.

Grease the finished pies with the remaining butter and serve.

8. Early maturing pies

 

Delicious, fast and easy!

Ingredients:

200 ml vegetable broth or water; 20 g fresh yeast; 3 art. flour; 0.5 st. refined oil; 2 tsp Sahara; 1 tsp salt; 500-600 g of filling.

Dissolve salt, sugar and 20 g of fresh yeast (or 7 g of dry) in warm vegetable broth or water. Then pour in the vegetable oil and add the flour in parts, knead not a stiff dough. Let the dough rest for 5 minutes.

Roll out the dough to a thickness of 5 mm and cut out circles with a large glass. Top with toppings such as mashed potatoes or sauerkraut.

Form pies and put on a baking sheet covered with baking paper, brush with beaten egg and sour cream.

Bake pies for 25 minutes at 200 degrees.

9. Meat pies with wild rice

 

You will cook puff pastry pies very quickly, and sesame will bring a new touch of taste.

You will need:

600 g puff pastry; 300 g minced meat; 100 g of steamed rice; 1 egg; 1 st. l. sesame; salt pepper.

Defrost puff pastry in advance, boil rice in proportion with water 1: 1.

Fry the minced meat in a pan until cooked, salt and pepper. Add minced meat to rice and mix, the filling is ready!

Roll out the dough to a thickness of 3 mm and cut into squares. Place 1 tbsp in the center of the square. l. fillings. Pinch the edges, brush with beaten egg and sprinkle with sesame seeds.

Bake pies at 180 degrees for 20-25 minutes. Enjoy!
