Often in recipes it is written: "Beat the yolks with sugar until the mass becomes light and the sugar is completely dissolved." It turns out that this is not so easy if you do not know one secret.
You can beat the yolks with sugar with a powerful mixer for 5 or 6 minutes, and the sugar will not completely dissolve in the yolks. You can, of course, just beat the yolk mass with sugar until clarified and the sugar is not completely dissolved, but this will not be entirely correct. Often, culinary specialists use powdered sugar or finely crystalline instant sugar in their work so that it completely dissolves in the yolks.
But what if you only have regular sugar on hand? It turns out that there is a way out. And in a few minutes you will have a lush, light yolk mass with completely dissolved sugar in your bowl, ready to go.
Recipes with chicken eggs
For work, we need eggs, sugar, hot water, two bowls of different sizes, a mixer.
Separate the yolks from the whites. Place the yolks in a smaller bowl. Eggs should be at room temperature.
Add all the sugar at once. There is no need to add sugar in batches, as we do when whipping egg whites with sugar.
Build a water bath. To do this, fill a large bowl with hot water (65-70 ° C). Place a smaller bowl of yolks on top. The bottom of the top bowl should be in contact with hot water, and the sides should rest on the large bowl.

Start whipping the yolks with sugar using a mixer, first at low speed of the mixer, and then at high speed.
After 2-3 minutes, all the sugar will completely dissolve, and the mass will brighten. The yolks are ready to go.
