- beat the eggs in a clean, dry bowl without any traces of fat;
- beat the chilled eggs, which are taken directly from the refrigerator shelf;
- beat the eggs with a mixer with a nozzle in the form of a frame or criss-cross frames;
- the mixer must be powerful enough to beat the eggs well into foam;
- use the beaten eggs immediately, do not leave them, as they will settle soon enough;
- if you do not beat the eggs well enough, then large air bubbles form in them, which burst when kneading the dough and the products will not turn out to be airy enough. Therefore, make sure that you beat the eggs to a good stable foam with small air bubbles.

Increase whipping speed. After 1 minute, the foam will become more magnificent.
Step 5
