Fresh cheese

Burrata and Mozzarella represent the category of soft, delicate and elegant cheese delicacies with a slight sourness originally from Italy.

Burrata is characterized by a characteristic oval shape of a bright white color, a light milky-creamy taste and moderate lemon acidity.

Mozzarella is a classic Italian cheese made from buffalo milk with a neutral aroma and light sourness, which is considered the basis for the traditional Caprese salad.

This includes the popular Mascarpone cream cheese, which is often used in restaurant desserts in Ukraine.

Soft cheese with mold

Among Italian cheeses with mold, products with white and blue (Gorgonzola) mold are distinguished.

Cheeses with white mold are characterized by a characteristic crumbly texture with a rich creamy taste and light notes of fresh mushrooms.

Gorgonzola, with its sharp and intense blue veins, is one of the most popular Italian cheeses, second only to the French Roquefort.

Semi-hard and hard cheeses

First of all, it is worth highlighting Taleggio, a semi-hard cheese that has a characteristic washed crust with a sharp smell and a sweet-soft truffle taste.

Hard cheeses are the real taste pride of Italy, which unites 3 main varieties popular all over the world:

  • Parmigiano Reggiano;
  • Pecorino Romano;
  • Grano Padano.

Parmigiano Reggiano hard cheese is the basis of many traditional Italian dishes. Like a fine wine, this cheese delicacy acquires a richer taste during the long aging process. Crumbly, salty and spicy are the classic characteristics of traditional Parmigiano Reggiano.
