Required products :
100 grams of almond flour
180 grams of powdered sugar
100 grams of protein at room temperature

Method of preparation :
Mix the almond flour with the powdered sugar and sift together 2 times.
Beat the egg whites until you get a stable foam, then add the sugar to them and continue to beat until "hard peaks". If you decide to use colorants, now is the time to add them. When you remove the whipping bodies from the foam, it must stand in a vertical position without "twisting", then immediately stop stirring.
Then add the flour with the powdered sugar, sifting directly on the egg whites and knead the dough from the bottom up using a spatula. Fill a pastry syringe with it, with the tip being 1 centimeter in diameter.
Line the bottom of a baking tray with parchment paper and form round cookies (about 4 cm). Tap the bowl on the table so that the air bubbles come out on the surface of the dough and disappear.
Allow the cookies to stand for 30-60 minutes to dry on top. When they stop sticking, place in a preheated 160 degree oven on medium heat for about 13-15 minutes.
When you take it out of the oven, let it cool and peel it off the paper.
