Method of preparation :
Pour the almond milk, egg yolks, honey, cornstarch into the pan and cook over medium heat for 6-8 minutes, stirring often, until the cream thickens. If necessary, strain the thickened mixture through a fine sieve into a bowl to remove lumps. Add the almond extract and salt and stir. Pour the combination into a box, close with a lid and refrigerate for 8 to 24 hours.
Pour the cooled mixture into an ice cream machine and freeze according to the manufacturer's instructions. Add the raspberries, dark chocolate and almonds and stir. Transfer the ice cream to a box, close with a lid and freeze for at least 4 hours before serving.
