Peel the apples, cut into small pieces and clean the core with the seeds. Stew the fruit together with the sugar, lemon peel and cinnamon. Allow them to cool.
Pour water over the raw nuts for an hour, then drain the liquid.
Transfer the fragrant apple pieces to the bowl of a blender. Pour the cashews, pour the almond milk, add the vanilla extract and ice cubes.
Beat until smooth and serve the drink in suitable glasses.
