Necessary products

For the dough:

250 grams of flour

1 egg

25 milliliters of oil

1.5 kilograms of apples

1 lemon

100 grams of raisins

10 grams of cinnamon

50 grams of almond leaves

50 grams of sugar

 

Method of preparation :

Separate the yolk from the egg white. Sift the flour, make a pile of it, in the center of which form a recess. Put the yolk and oil in it. Knead a smooth dough by hand, pouring a little warm boiled water. Knead for 10 - 12 minutes until you get a homogeneous mass that stretches easily. Then shape the dough into a ball, grease it with oil, put it in a suitable container and cover with a clean towel. Leave for 2 hours in a warm place.

Meanwhile, prepare the filling. Wash and dry the raisins. Mix the sugar and cinnamon. Wash and peel the apples, remove the core with the seeds and cut the fruit into 1.5 cm thick pieces. Then cut each part into small pieces. Pour them into a saucepan, add lemon juice, then raisins, sugar with cinnamon, almond leaves. Mix everything well.

Assemble the strudel. Put the butter in a suitable pan over high heat. It should melt, but you should not let it boil. Remove from the heat and allow to cool to room temperature.

Cover the hob with a linen cloth, which you sprinkle evenly with flour. Put the dough and roll it out, then carefully roll it out with your hands. It is rolled from the middle to the end. You should get a thin rectangular layer measuring 80 by 100 cm. To make the dough really thin, cut off the thick edges.

Coat the surface with the melted and cooled oil (use a brush). Distribute an even layer of the filling, leaving 3 cm at the end without filling. Roll up the roll with the help of the linen cloth (tablecloth). Pinch the edges. Grease the roll with melted butter.

Line a baking tray with parchment paper and grease it with oil. Put the dessert and cover it with a towel. Wait 15 minutes, then bake in the oven at 200 degrees for 20 - 25 minutes (until the dough is ready).

When the juice begins to separate from the strudel, which is caramelized, remove the dessert from the oven, cut it into 7 - 8 pieces and leave to cool to room temperature. You are half done. Make the final part before serving. Namely: put as many pieces as you want in a tray lined with baking paper and place in the oven for 10 minutes. Serve hot. It is very important not to burn this delicacy, so be careful.

Serve with a ball of vanilla ice cream, decorate with almond leaves, fresh fruit or anything else of your choice.
