Necessary products

For the dough :

100 grams of butter

150 milliliters of warm cream (with a fat content of about 20%)

1 tablespoon yeast

pinch of salt

3 tablespoons sugar

2 egg yolks

600 grams of flour

 

About the filling :

4 apples (preferably slightly sour, not quite ripe)

2 teaspoons sugar

2 teaspoons cinnamon

1 - 2 handfuls of raisins

a little lemon juice

 

For spreading :

1 egg

 

For the glaze :

1 tablespoon powdered sugar

2 tablespoons fresh milk

Method of preparation :

Dissolve the yeast in the warm cream, stir and leave for 15 minutes. Before that time, melt the butter, add the cream and mix well. Then add the remaining ingredients and knead the dough - soft and elastic. Cover it with a towel and leave in a warm place for about half an hour. It will rise quickly.

 

Until this happens, prepare the filling. Peel the apples, cut and clean the core with the seeds. Grate or cut into small pieces, sprinkle with lemon juice and store in the refrigerator so that they do not darken completely while the dough rises. Wash the raisins with cold water, pour boiling water over them and leave for 15 minutes to soften.

 

When the dough is ready, roll out a sheet in the shape of a rectangle, spread with egg. Drain the juice from the apples and spread them on the surface, leaving about 1 cm of free dough. Sprinkle with sugar, cinnamon and raisins.

 

Roll into a roll (if possible tight) and place it in a tray lined with baking paper or simply greased with oil. Wrap the roll, forming a wreath, fasten the ends. Using a sharp knife, make incisions on the surface of the "gum" and bake it in a preheated oven to 180 degrees for about 20 - 25 minutes (the filling does not fall apart).

 

When baked, cover with a towel and allow to cool. Meanwhile, make the glaze: beat the milk with the powdered sugar and "draw" shapes or just cover the apple delicacy with strokes.

 

If desired, you can add walnuts to the filling, also use lemon (squeeze its juice, grind it and sprinkle with sugar).
