How To Cook Baked Salmon With Parmesan And Lemon-cream Sauce - Recipe

Required products :

  • 1/2 salmon / about 1 1/2 kilograms /
  • 4 tablespoons Dijon mustard

For the parmesan crust :

  • 1 teaspoon breadcrumbs
  • olive oil
  • 3 tablespoons melted butter
  • 1/3 tea cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh dill, finely chopped
  • peel of 1 lemon, finely grated
  • 1/2 teaspoon salt
  • freshly ground black pepper

For the sauce :

  • 2 tablespoons butter
  • 1 1/2 teaspoons crushed garlic
  • 1 1/4 tea glasses of white wine
  • 1 1/2 teaspoons cream
  • 1 tablespoon Dijon mustard
  • 2 1/2 tablespoons lemon juice
  • 1/2 teaspoon sugar
  • salt and pepper to taste

Method of preparation :

 

  • Remove the salmon from the refrigerator and let it stand at room temperature for 15-20 minutes.
  • Preheat the oven to 180 degrees with a fan function or to 200 degrees if you do not use one.
  • Spread the breadcrumbs in a pan, sprinkle with a little olive oil and bake until golden brown. Transfer to a bowl.
  • Add the butter, stir, then add the parmesan, parsley, dill, lemon zest and salt.
  • Season with freshly ground black pepper and mix well.
  • Cover a large pan with foil and place the salmon fillet.
  • Spread it with Dijon mustard and sprinkle with Parmesan cheese mixture. Press lightly with your fingers to fit snugly.
  • Bake for 20 minutes and transfer to a plate. In all likelihood, the skin will remain glued to the foil.
  • While the salmon is roasting, prepare the lemon-cream sauce by melting the butter in a saucepan over medium heat.
  • Add the garlic and cook for about 2 minutes.
  • Add the wine and let the sauce simmer for 5 minutes.
  • Reduce heat and add cream, sugar, salt and pepper.
  • Add the lemon juice and mustard, stir and simmer the sauce for 2-3 minutes until thickened.
  • Season with extra salt, freshly ground black pepper and lemon juice, as the salmon is not flavored.
  • Remove from the heat and allow to cool for about 10 minutes.
  • Serve the roasted salmon, garnished with lemon slices, radishes, fresh dill and generously drizzled with lemon-cream sauce.
