Melt the butter in a pan over medium heat. Add the flour and stir until absorbed by the butter, but be careful not to brown - about 3 minutes. Add the milk in a thin stream, stirring constantly to dissolve the flour. Increase the temperature a little and cook for about 4-6 minutes until it starts to thicken. Add the nutmeg, 3/4 teaspoon salt and 1/4 teaspoon black pepper. Add 1 cup of the selected yellow cheese and stir to melt completely.
Pour 1/3 of the béchamel sauce into a rectangular pan. Put 6 slices of bread on top and spread them with mustard.
Put 2 folded slices of ham on each (so that the sausage does not come out of the edges of the slice) and pour another 1/3 of the sauce. Sprinkle with some yellow cheese.
In the other 6 slices, make a hole in the middle with a small ring and place them in the tray to close the sandwich. Drizzle with the remaining bechamel sauce and add more yellow cheese (trying not to put in the holes of the bread).
Beat one egg in each hole and sprinkle with the last remaining yellow cheese on top. Add salt and pepper.
Cover with foil and bake for 20 minutes at 180 degrees. Then remove the foil and bake for another 10 minutes until the egg whites are browned and the yolk remains liquid.
Wait 10 minutes before serving.
