How To Cook Baked Whole Potatoes With Arugula And Parmesan And Mustard Sauce - Recipe

Required products :

  • 2 large potatoes
  • sea ​​salt
  • butter or olive oil
  • 2 handfuls of arugula
  • 1 tablespoon vinegar
  • 1 teaspoon mustard
  • 1 egg yolk
  • 100 milliliters of olive oil
  • 2 tablespoons parmesan
  • 2 teaspoons freshly squeezed lemon juice

 

Method of preparation :

Wash well (you can use a brush) whole unpeeled potatoes. Dry them and pierce in several places with a fork, then sprinkle generously with sea salt.

Bake them at 200 degrees until ready (this can take an hour or more, depending on their size).

While the potatoes are in the oven, make a sauce by mixing the vinegar, mustard, egg yolk and olive oil. Add a large pinch of salt, parmesan and finally lemon juice. Mix everything and taste. If necessary, adjust by adding more of the missing ingredient to make you like the sauce.

Make cross-cuts on the prepared potatoes and divide lightly with your fingers. This will make room for the aromatic additive.

Put a piece of butter or a little olive oil in each hole, then the sauce and add salt.

Mix the arugula with the rest of the sauce and spread the combination on top.

The appetizer is extremely tasty.
