Required products :

250 grams of puff pastry

4 eggs

100 grams of starch

30 grams of flour

300 grams of sugar

1 vanilla / vanillin

800 milliliters of fresh milk

200 milliliters of water

300 milliliters of high-fat cream

Method of preparation :

Preheat oven to 180 degrees. Take a high pan, grease the bottom and walls with oil and sprinkle with flour. Roll out the dough thinly and cut it in half, forming two loaves the size of the dish in which you will bake. Put them in the pan and pierce with a fork. Bake for about 12 - 15 minutes and cut one into large squares and leave the other whole.

Separate the egg whites from the yolks. Beat the egg whites with 1/3 of the sugar until you get a firm foam. Beat the yolks with 1/3 sugar and add the vanilla. Then pour the flour, starch and water.

Bring the milk to a boil and when this is done, add the yolks, stirring quickly. Let the cream thicken, remove from the heat and cool slightly. You should mix it with the proteins.

Cover the bottom and walls of a high baking tray with parchment paper. Put the whole loaf first, spread the cream on it and level the surface.

Beat the cream with the remaining sugar and apply it on the cream. Finish the cake by arranging the squares of dough. Put it in the refrigerator for 5 - 7 hours, and preferably overnight.

Enjoy your meal!
