Required products :

  • 2 teaspoons flour
  • 2 teaspoons sugar
  • 1/2 cup cold butter
  • 4 eggs
  • 1 1/2 teaspoons grated fresh coconut or full-fat coconut shavings
  • 1 teaspoon lime peel
  • 1/3 tea cup fresh lime juice
  • 3 tablespoons tequila
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method of preparation :

Preheat oven to 175 degrees.

Cover the bottom and walls of a rectangular tray with aluminum foil, leaving 2-3 cm to protrude beyond the tray, so it will be much easier to remove the dessert later. Grease the bottom and walls with grease of your choice (coconut or cow's oil, maybe oil).

Mix 1 3/4 cup flour together with 1/2 cup sugar. Add the flour and use a fork to make crumbs. Press the resulting dough on the bottom of the pan.

Bake for 20-23 minutes until lightly browned.

Meanwhile, beat the eggs with the coconut, lime juice and tequila peel, add the remaining sugar.

Mix the flour, salt and baking powder and pour over the egg mixture.

Pour the resulting thin dough over the marsh and bake for another 25 minutes. Cool for 1 hour, then chop. Garnish with powdered sugar, more coconut or slices of green lemon.

Although they are unlikely to be left over from the delicious lemon bars, store them in a tightly closed box in the refrigerator.
