How To Cook Bean Salad With Vegetables, Feta Cheese And Herbal Dressing - Recipe

This colorful vegetable salad is very suitable with skewers or grilled meat. The herbal dressing gives a very pleasant taste and aroma to the salad.

Required products :

  • 400 grams of canned black beans, drained
  • 2 large handfuls of baby spinach, sliced
  • 500 grams of tomatoes, chopped
  • 1/2 cucumber, cut into crescents
  • 1 mango, peeled and cut into pieces
  • 1 large head of red onion, cut into thin strips
  • 6-8 radishes, cut into thin circles
  • 2 avocados, peeled and cut into thin slices
  • 100 grams of feta cheese, crushed
  • handful of leafy greens (mint, coriander and basil)

for dressing:

  • great connection mint
  • small bunch of coriander
  • small bunch of basil
  • 1 green hot pepper, seedless and chopped
  • 1 small clove of garlic
  • 100 milliliters of olive oil
  • juice and korat for 2 limes
  • 2 tablespoons white wine vinegar
  • 2 teaspoons honey

Method of preparation :

Prepare the dressing by mixing all the ingredients in a food processor or cutting them very finely. Set aside 1 handful of leaves for the salad. You can prepare the dressing up to 24 hours before serving.

Pour the black beans and spinach into a bowl along with the tomatoes, cucumber, mango, onion and radish and stir. Garnish with avocado, shredded feta cheese and fresh greens. Season with dressing and serve.
