Required products :

For the chicken confit:

  • 700 grams of skinned chicken (legs, wings or other)
  • 1 head of garlic - unpeeled and halved
  • 2 onions - halved
  • 4 sprigs of thyme
  • 2 bay leaves
  • 4 juniper berries
  • 1 teaspoon olive oil
  • salt and pepper

For a baked bean:

  • 1 large onion
  • 4 cloves garlic
  • 1 can of whole peeled tomatoes
  • 4 teaspoons of boiled beans plus 1 teaspoon of the liquid in which it was boiled
  • 2 smoked sausages
  • 1 thick slice of bread with yeast

Method of preparation :

To prepare the confit: Preheat the oven to 110 degrees. Season the chicken with salt and pepper and place it in a saucepan that you can also use in the oven. Add the other products to the chicken - garlic, chopped onion, thyme, bay leaf and juniper berries. Pour out the oil. Put to heat on a very low heat on the stove and then transfer to the oven. Cook for 2-2.5 hours. Allow to cool in the fat overnight. Store in a dark and cool place. 

Prepare the chicken confit 3 days before completing the rest of the recipe.

Preheat oven to 160 degrees. Put 1/3 of the chicken fat in a pan and heat it to a medium temperature. Finely chop the onion and garlic and fry until soft - about 10-12 minutes. Remove the garlic cloves from the chicken confit and "squeeze" them in the pan, then add the canned tomatoes and mash them. Bring to a boil, stirring occasionally, cook until the liquid evaporates, this will take you about 5 minutes.

Add the cooked beans and the liquid that you separated during cooking. Add the remaining fat from the confit. Season with salt and pepper.

Once it boils, transfer the bean mixture to a pan. Put the chicken skin side up on the beans and arrange the sausages around it. Add the garlic and onion from the chicken confit to the other products. Cook in the oven for 2 hours until the chicken is golden and the beans are well baked.

Grind the slice of bread in a blender until large crumbs are obtained. Put it in the pan in which the confit was to use the remaining fat on the dish, stir and season with salt. Sprinkle the dish in the oven with the crumbs and bake for another 20-25 minutes, until they also turn brown and become crispy.
