Required products :

  • 1 and 1/2 teaspoons ground cumin
  • 1 and 1/4 teaspoons ground black pepper
  • 1 teaspoon ground coriander, salt and paprika
  • 150-200 grams of veal steak flank
  • 1/2 red onion
  • 1/2 teaspoon extra virgin olive oil + 3 and 1/2 tbsp
  • 2 tablespoons wine vinegar
  • 1/2 teaspoon honey and wholemeal mustard
  • 1 teaspoon low-fat yogurt
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 small clove of garlic, grated
  • 1 head of lettuce, torn off the leaves lengthwise
  • 5 cherry tomatoes, cut in half
  • 2 mini cucumbers, cut into cubes
  • fresh mint leaves
  • 1 tablespoon fresh chives, chopped

Method of preparation :

Let the grill heat up.

marinade:

Make the marinade in a small bowl, mixing 1 teaspoon of cumin, black pepper, coriander, paprika and 1/2 teaspoon of salt. Put the flank steak in the marinade bowl to taste on both sides. Allow to stand at room temperature for 10 minutes.

vinaigrette with onion:

Pour the peeled half an onion with 1/2 teaspoon of olive oil. Roast the onions on the grill and transfer to a small bowl, cover with a
lid and leave to soften for about 10 minutes.

Beat in a small bowl until smooth vinegar, honey, mustard and 1/4 teaspoon salt with the remaining 3 and 1/2 tablespoons olive oil and 1/4
teaspoon pepper, add onion and stir.

steak:
