Required products :

  • 900 grams of diced beef
  • 3 tablespoons flour
  • 2 tablespoons olive oil
  • 330 milliliters of dark beer
  • 25 grams of butter
  • 4 large onions, thinly sliced
  • 2 stalks of celery, chopped
  • 4 cloves garlic, whole
  • 2 bay leaves
  • 1 tablespoon muscovado sugar
  • a handful of thyme
  • 1 tablespoon vinegar
  • 100 grams of yellow cheese
  • 1 tablespoon mustard
  • 4 slices of baguette, cut diagonally

Method of preparation :

Roll the meat in flour.

Heat 1 tablespoon olive oil in a large saucepan and fry half of the meat. Take it out on a plate, put some beer in the pan and grate the meat on the bottom. Pour the beer over the veal. Put another spoonful of olive oil in the pan and cook the rest of the meat in the same way.

Put the butter in the same pan and fry the onion, carrot, celery and garlic for 10 minutes until soft. Add the bay leaf, sugar and half the thyme. Finally add the vinegar.

Turn the oven to 150 degrees.

Return the meat to the pan along with the juices separated in the plate. Cover with a lid, leaving it slightly ajar to let the steam out, and cook for 1 hour and 45 minutes.

Mix the remaining thyme with the mustard and yellow cheese. Put the mixture on the slices and bake until crispy, for 30 minutes.

Serve the stew with the toasted slices.
