Method of preparation :
Preheat oven to 200 degrees.
Bake the beets, wrapped in aluminum foil, for 60-90 minutes or until soft, then cool for 15 minutes and cut into cubes.
Blend the beets, olive oil, chickpeas, tahini, lemon juice, cumin, salt, coriander and hot pepper until creamy.
Serve beetroot hummus with pomegranate seeds and crushed pistachios if desired.
