Required products :

For the muffins:

  • 2 teaspoons white wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted cold butter
  • 1 teaspoon cooking cream + 1 tablespoon
  • 1 1/2 teaspoons blueberries
  • 1 1/2 teaspoons raspberries
  • 2 tablespoons muscovado sugar

For the sugar glaze:

  • 1 teaspoon powdered sugar
  • 2-3 tablespoons of fresh milk
  • 1/2 teaspoon vanilla extract

Method of preparation :

To prepare the rolls, mix the flour, baking powder, salt and sugar in a bowl. Stir with your fingers and add the butter, rub it into the flour with your hands to get crumbs. Add the cream and knead a soft crumbly dough.

Knead the kitchen counter and transfer the dough on it. Roll it 2-3 mm thick and if possible make a rectangular shape.

 

Arrange half of the fruit in the middle along the length of the dough.

 

Transfer one part of the dough to the fruit and sprinkle with the remaining raspberries and blueberries. Wrap with the rest of the dough.

 

Cut the edges, if necessary, to get a tight rectangular envelope.

 

Cut with a knife to get 6 triangles.

Transfer them to a baking tray lined with parchment paper, spread them with cooking cream and sprinkle with muscovado sugar.

Bake them for 20-25 minutes until golden brown in an oven preheated to 200 degrees.

 

Once they are ready and cooled, prepare the glaze.

Put the powdered sugar in a small bowl, gradually add the milk until you get the desired density, stirring with a wire or fork all the time. Add the vanilla and use a spoon to make strokes on each bun.
