How To Cook Bread With Miso Paste, Sweet Potatoes And Pumpkin Seeds - Recipe

Required products :

  • 1/2 teaspoon + 1 1/2 teaspoon olive oil
  • 1 1/2 teaspoons flour
  • 1 teaspoon baking powder and cinnamon powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pure maple syrup
  • 2 tablespoons miso paste
  • 1 tablespoon vanilla extract
  • 2 eggs
  • 1 sweet potato, grated
  • 1/2 cup raw pumpkin seeds

Method of preparation :

Preheat the oven to 170 degrees and grease a small rectangular cake tin with olive oil.

Using a wooden spoon, mix the flour, baking powder, cinnamon and salt.

Mix the maple syrup, miso paste and vanilla in a large bowl. Stir in the eggs and 1/2 teaspoon of olive oil. When the products are combined, add the grated potatoes. Transfer the flour and mix to obtain a homogeneous mixture.

Pour the dough into the prepared pan. Lightly spread the dough with the remaining 1/2 teaspoon of olive oil and sprinkle thickly with pumpkin seeds.

Bake for about 55-60 minutes until dry. Then allow to cool for 30 minutes in the mold. Remove to a wire rack and allow the bread to cool completely before slicing.

The finished bread can be stored well wrapped for up to 5 days at room temperature.
