Required products :

  • 400 grams of flour
  • 1/4 teaspoon dry fast-acting yeast
  • 1 teaspoon salt
  • 3 sprigs of fresh thyme or 1 tablespoon dried
  • 50 grams of dried tomatoes
  • 380 milliliters of cold water


Method of preparation :

If the dried tomatoes you have are in oil, first squeeze them out of the fat and dry well. If they are too hard, soak them in hot water for 30 minutes. Cut them into small pieces.

From fresh thyme stalks use only the leaves.

Sift the flour into a large bowl. Add salt, yeast, tomatoes, thyme and mix thoroughly with a wire whisk or a fork.

Then pour the water and stir with a spoon so that all the flour is moistened (about 30 seconds).

Cover the bowl with a towel or plastic wrap and leave the dough in a warm place for at least 12 hours (preferably 16-18).

When the entire surface of the dough is covered with small bubbles, you can shape the bread.

Transfer the dough (it will be sticky) on a floured surface and fold the four sides in the middle (like an envelope). Turn back, cover again with a towel and leave for a quarter of an hour.

Prepare two towels. Sprinkle one of them thoroughly with flour, put the dough on it, which you previously shaped like a ball, and cover it with the second fabric.

Two hours of patience follow, because the dough needs to rise (in a warm place).

Put a pan with a lid in the oven, which turn on 230 degrees to heat together with the dish.

When the dough rises, put it in the pan, with the whole smooth part on top. Cover with a lid and place in a hot oven for 30 minutes.

Then remove the lid and bake the bread until golden brown (another 15-30 minutes).

When ready, carefully remove from the pan, place on a wire rack and allow to cool.
