Required products :

  • 4 chicken breasts
  • 20 grams of butter
  • 20 grams of flour
  • 300 milliliters of fresh milk
  • 50 grams of grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons finely chopped parsley
  • 8 slices of bread, without crusts
  • 4 tablespoons mayonnaise and mustard
  • 8 slices of cheddar
  • 8 slices of Swiss cheese (maybe yellow cheese)
  • 8 slices of ham
  • 200 grams of cornstarch
  • 300 milliliters of buttermilk
  • 1 egg
  • 300 grams of flour
  • 1 teaspoon smoked paprika, cayenne pepper, garlic powder and dried thyme
  • 1/2 teaspoon salt and pepper

Method of preparation :

Heat a little oil in a pan and fry the chicken for 3-5 minutes on each side, seasoning it directly in the pan with salt and pepper. Transfer to a plate and chop the chicken with a fork.

Put the butter in the pan, and when it melts, add the flour, stir and a minute later pour the milk. Stir and simmer for about 2 minutes to make a sauce. Remove from the heat and add the parmesan, mustard, salt and pepper. Stir in the shredded chicken.

Spread the bread slices with mayonnaise on both sides. Put 2 slices of cheddar on top, 2 slices of ham, 1/4 of the chicken mixture and 2 slices of Swiss cheese on top. Close the sandwiches with the slices.

Heat oil in a deep frying pan and fry the sandwiches on each side until golden.

Pour the cornstarch into a bowl and mix the buttermilk with the eggs in another. In a third bowl, place the flour mixed with the spices.

Roll the sandwich in the cornstarch, then dip in the buttermilk and roll in the flavored flour. Leave for 10 minutes to absorb the flour from the eggs.

Fill 1/3 of the pan with oil when hot, dip the sandwich in the fat and fry for 4 minutes to become golden and crispy. Serve immediately.
