Although very easy to cook, poached eggs are a delicacy prepared only by the greatest masters. And while it's not easy to make perfect, you can easily cover up imperfections by breading them in a crispy crust.

Required products :

for breading:

  • 8 thin slices of bacon, finely chopped
  • 3 tablespoons butter
  • 1 1/2 teaspoons breadcrumbs
  • 2 pinches of hot red pepper
  • salt and pepper

for eggs:

  • 1 tablespoon salt
  • 8 eggs for spreading
  • 1/2 teaspoon flour
  • 3 eggs for breading

Method of preparation :

Fry the bacon until crispy and drain on paper. Melt the butter in the pan together with the bacon fat and add the breadcrumbs. Bake for 5 minutes until golden.

Transfer to a bowl and add the bacon, finely chopped. Stir and season.

To make the eggs, put water in a saucepan and when it starts to simmer slightly, add salt.

Fill a bowl with water and put a few ice cubes in it.

Beat the eggs in separate bowls and carefully pour 1-2 into the hot water. When you put the egg in the pan, carefully slide the spatula under it so that it does not settle to the bottom and does not stick. Boil for 2-3 minutes and remove with a slotted spoon. Quickly immerse it in cold water and remove immediately, this will stop the cooking process.

Prepare all the eggs in the same way (if you have your own technique for successfully spreading eggs, use it).

When the eggs have cooled, dry them with paper.

Put the flour in a bowl, beat the breaded eggs and add 1 tablespoon of salt.

Carefully roll the poached eggs first in flour, then dip in the beaten and finally in the crispy bacon batter.

Fry the eggs in hot fat until done.
