Method of preparation :
In a fireproof bowl, mix the sugar, cocoa, butter and salt. Place the bowl on boiling water, being careful not to touch the bottom of the liquid). Stir periodically until the butter is completely melted. Allow the mixture to cool to keep warm but not hot - about 5 minutes.
Add the vanilla and stir with a wooden spoon. Add the eggs one by one, stirring constantly. Finally, add the flour and combine.
Cover the dough with foil and put in the freezer overnight.
For the filling, mix the sugar, starch and salt in a small bowl.
Beat the cream cheese with a mixer, add the sugar mixture and then the chocolate. Stir and refrigerate for 8 hours.
Allow the dough and the filling from the freezer to rest for 10 minutes at room temperature.
With a spoon dipped in hot water, take out the dough. Form 20 balls. Make a small hole in the center and fill it with a small amount of stuffing and shape the ball again.
Arrange the balls in a tray at a distance from each other.
Put back in the freezer for 10 minutes.
Bake the biscuits for 12-14 minutes at 180 degrees. Sprinkle with sea salt and allow to cool briefly in the pan, then carefully transfer to a wire rack and cool completely.
Consume them within 2 days, and if you choose, you can freeze them and store them for up to 2 months.
