How To Cook Burger With Vegetables, Quinoa Meatballs And Sauce - Recipe

Required products :

  • 1 large porcini mushroom, cleaned and finely chopped (or other type of mushroom)
  • 1 cup canned black beans, drained
  • 2 tablespoons almond oil
  • 3 tablespoons mayonnaise (vegetarian)
  • 1 teaspoon ground black pepper
  • 3/4 teaspoon smoked paprika
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 cup boiled quinoa
  • 1/4 cup oatmeal
  • 1 tablespoon ketchup
  • 1 teaspoon Dijon mustard
  • 1 tablespoon extra virgin olive oil
  • 4 wholemeal hamburger cakes, toasted
  • 2 lettuce leaves, chopped
  • 4 thin slices of tomato
  • 4 thin slices of red onion

Method of preparation :

Blend in a food processor the mushroom, black beans, almond oil, 1 tablespoon mayonnaise, black and red pepper, 1/2 teaspoon garlic powder and salt until all ingredients are mixed. Transfer to a bowl and mix with the quinoa and oatmeal, stir and cool for 1 hour.

Beat the ketchup, mustard and the remaining 2 tablespoons of mayonnaise, 1/4 teaspoon of garlic powder and mix until smooth. Form 4 meatballs from the cooled mushroom mixture. Heat olive oil and fry them in it for about 4 minutes on each side or until crispy and golden crust.

Put in the baked bread a meatball, sauce and garnish of lettuce, tomato and onion, serve.
