150 grams of butter
2 - 3 raw egg yolks
2 - 3 tablespoons of water

Method of preparation :
Mix the yolks and water in an enamel bowl, add the butter, cut into pieces and stir with a wire whisk, simmering the mixture over low heat until it thickens (should be obtained with the consistency of cream). When this happens, remove from the heat and season with salt and lemon juice.
