Thaw and spread the puff pastry. Put basil, cheese, salt and olive oil in a blender bowl. Blend until smooth and pour the mixture into another bowl. Rinse and add the olives, grease and make a second pesto of the same consistency.
Spread both types on the dough so that the basil is on half of the peel and the olive paste on the other. Roll the ends of the rolls from the outside to the inside. Meet them in the middle, cut carefully with a sharp knife and arrange the molds on a tray lined with a sheet of parchment.
