Required products :

for the jam:

  • 1 kg of oranges
  • 1 large lemon, sliced
  • 2 pounds of sugar

for biscuits:

  • 200 grams of butter
  • 200 grams of sugar
  • 3 eggs
  • 100 grams of wholemeal flour
  • 100 grams of white flour
  • 2 teaspoons baking powder
  • 150 grams of jam
  • 3 tablespoons orange juice
  • 1 orange
  • 1 red orange
  • 1 grapefruit

Method of preparation :

To make the jam, squeeze the orange juice, strain it so that no fruit particles remain.

 

Use a spoon to carve the remains on the peels, the goal is to get only the well-cleaned orange peel, which you cut into thin strips and mix with the juice of 1 lemon. Put the leftover orange in cheesecloth and tie.

Put the resulting bag in a large saucepan and fill with 2.5 liters of water. Add the crusts and cook for 2 hours.

Put an empty plate in the freezer.

Discard the bag and add the sugar to the jam. Cook for another 15 minutes until melted.

 

Increase the temperature and cook vigorously for another 15 minutes to thicken the sauce. Put a spoonful of jam in a cold plate and wait 1 minute. Then touch with your finger, if the jam is firm, then it is ready, if it is liquid, continue to reduce for another 15 minutes.

Pour it into jars and cool (save 150 grams of it for making the cake).

Prepare the cake. Turn the oven to 160 degrees and line a rectangular cake pan with paper.

Mix the soft butter with the sugar and add the eggs, stirring after each, to absorb the mixture. Finally, add the two types of flour, baking powder, 100 grams of orange jam and 3 tablespoons of orange juice.

Bake for 50 minutes, during the first 15 of them, the cake should be covered with foil.

Cool the finished cake for 10 minutes in the form, then transfer to a wire rack and cool completely.

 

Heat the remaining jam in a saucepan and spread it on the cake. Cut and peel the oranges and grapefruit and arrange some of them on the dessert, then pour more of the jam.

Slice and serve with extra slices of citrus.
