Necessary products

For swamps:

4 egg yolks

160 - 180 grams of flour (1 cup of tea)

100 grams of sugar

100 grams of cream

100 grams of butter

1 packet of leavening agent or 1 teaspoon of baking soda quenched in a tablespoon of vinegar

pinch of salt

 

For cream:

4 proteins

100 grams of butter

300 grams of sugar

200 milliliters of fresh milk

15 grams of gelatin leaves

 

For the glaze:

5 tablespoons sugar

4 tablespoons water

3 tablespoons cocoa

30 grams of butter

 

 

Method of preparation :

Mix the yolks with the sugar, add the cream, softened butter, baking powder, a pinch of salt and flour. Knead a soft dough.

Grease a suitable form with oil, sprinkle with breadcrumbs, put the dough and flatten with a spoon.

Place in the oven preheated to 180 degrees and bake the marshmallows for 20 - 25 minutes. When it starts to turn red, turn it off and allow the marshmallow to cool, opening the appliance door without removing the container.

 

For making cream

Pour the cold milk into a saucepan, put the gelatin, after 15 minutes put on low heat and heat, stirring constantly, without allowing the mixture to boil. When the gelatin has melted, remove the pan from the heat. Wait for it to cool to room temperature.

Mix the butter with 100 grams of sugar in a large bowl. Then beat with a mixer on low speed, gradually adding the milk with gelatin. Beat until thick cream.

In another bowl, beat the cold egg whites with a pinch of salt and a few drops of lemon juice. Add the remaining 200 grams of sugar and beat at high speed until a firm foam forms.

Gradually add the butter-gelatin mixture to the egg whites, stirring slowly. When you put the whole amount, beat for a few more minutes and you should get a thick cream.

Cut the baked loaf in half to get two pieces. Spread one with cream, put the second on top, spread it and put it in the fridge for an hour.

 

Meanwhile, prepare the glaze. To do this, mix sugar, cocoa, water and butter. Bring the combination to a boil and cook for a few minutes, then allow to cool. As it cools, it will thicken. It is important to consider the moment when you will pour the cake, because with too thick icing it will be harder for you to work.
