How To Cook Canned Cauliflower With Tomatoes And Garlic - Recipe

Required products :

  • 2 kg of cauliflower
  • 2 tablespoons sugar
  • 3 tablespoons oil
  • 2 tablespoons vinegar 9%
  • 1.5 kilograms of tomatoes
  • 4 cloves garlic
  • 1 pepper (sweet)
  • a handful of parsley
  • 1 tablespoon salt for tomato sauce
  • 3 liters of water
  • 1 teaspoon blanching salt

 

Method of preparation :

Divide the cauliflower into roses.

 

If you consider, cut into smaller pieces.

 

Put them for 5 minutes in boiling salted water, then drain the liquid (use a colander).

Prepare the products for making the tomato sauce.

 

Peel the garlic cloves, clean the sweet pepper from the seeds and cut it into several pieces.

Peel a squash, grate it and squeeze the juice. Cut it into 2-4 pieces and put it in a blender.

 

Add the pieces of pepper, garlic, grind and transfer the mixture to a saucepan. Pour the oil, season with salt and sugar.

Place the pan on the hob and bring to the boil. Then reduce the temperature to a minimum, add the blanched cauliflower and parsley to the tomatoes.

 

Cook the vegetables for 10 minutes, but no longer, because the cauliflower will boil and turn into a pulp (for the same reason, be careful when mixing the products).

At the end of cooking, pour the vinegar and remove the pan from the heat.

 

While the mixture is hot, distribute it in sterilized jars and close immediately.

Turn with the lids down, wrap in a blanket or other suitable cover.

Once the cans have cooled, store in a dark, cool place. So you can store up to half a year.
