Required products :

  • 2/3 tea cup coconut sugar
  • 1/3 tea cup coconut oil, melted
  • 2 tablespoons almond oil
  • 2 eggs
  • 1 teaspoon almond flour
  • 1/4 teaspoon tapioca flour
  • 1 teaspoon coconut flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg powder
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1/3 cup raisins

Method of preparation :

  • Preheat the oven to 180 degrees and grease a bread pan with coconut oil.
  • In a large bowl, mix the coconut sugar with the coconut and almond oil.
  • Add the eggs one at a time, stirring after each addition.
  • In another bowl, mix the almond flour, tapioca flour, coconut flour, salt, baking powder, baking soda, turmeric, cinnamon and nutmeg.
  • Add the dry to the egg mixture and stir with a wooden spoon.
  • Add the carrots, walnuts and raisins and stir to distribute evenly.
  • Pour the mixture into the prepared pan and bake for 40-50 minutes or until a toothpick comes out clean from the center of the bread.
  • Allow the carrot bread to cool completely before slicing and serving.
