Preheat oven to 180 degrees and grease pan.
Pour the cake flour, water, olive oil and eggs into the bowl of the mixer and beat until smooth. Pour the grated carrots, pineapple and 100 grams of walnuts and continue to stir until a smooth dough. Spread it in the prepared pan and bake for about 25 minutes or until done, then set aside to cool.
Beat the cream cheese, butter and vanilla with a mixer until smooth. Gradually add the powdered sugar without stopping the mixer until a homogeneous cream is obtained. Spread it evenly on the cake.
Garnish with crushed walnuts and coconut chips. Cut into pieces and serve.
