How To Cook Carrot Cream Soup With French Lentils - Recipe

Required products :

  • 6 carrots, cut in bulk
  • 1/2 teaspoon cumin
  • 1/4 tea cup olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, thinly sliced
  • 2 stalks of celery, finely chopped
  • 3 cm ginger root, grated
  • petals of 3 sprigs of thyme
  • 1 1/2 liters of vegetable broth
  • 1 tea cup French lentils (green)
  • crispy bread to serve

Method of preparation :

Turn the oven to 180 degrees and line a large baking tray with parchment paper.

Put the potatoes, cumin and 2 tablespoons of olive oil in a bowl and stir to taste. Pour into the pan and bake for 30 minutes.

Heat the remaining 1 tablespoon of olive oil in a saucepan. Fry the onion and garlic for 3-4 minutes, until soft. Add the celery and fry for another 3-4 minutes to soften it. Add the ginger, thyme, broth and baked potatoes. Cook for about 25-30 minutes until the liquid is reduced. Blend the soup.

While the carrots are roasting, boil the lentils until ready in about 2 1/2 teaspoons of water for about 30 minutes. Strain it, if there is any water left in it, and add it to the pureed soup.

If necessary, warm the soup before serving.

Garnish with more thyme and serve with toast.
