With the onset of winter, soups are increasingly present in our menu. They warm us up and cook very quickly, which is why they are preferred. Undoubtedly the favorite is the chicken soup, but this carrot cream soup is not inferior to it in the least. And served with freshly baked baguettes is even tastier.

Required products :

  • lump of butter
  • 1 onion, finely chopped
  • 650 grams of carrots, coarsely chopped
  • 1 potato, peeled and sliced
  • 1 teaspoon ground coriander
  • 1 cube vegetable broth dissolved in 1 liter of water
  • 4 frozen baguettes
  • 30 grams of coriander
  • 4 tablespoons cream
  • 1/2 teaspoon paprika

Method of preparation :

Melt the butter and fry the onion in it, stirring occasionally until soft - it takes about 4-5 minutes. Add carrots, potatoes, coriander powder and season to taste with salt and pepper. Stir well.

Pour the broth, you need to cover the vegetables. Stir and bring to a boil. Cover with a lid, reduce the heat and cook for 30-35 minutes until the vegetables are soft.

Meanwhile, bake the baguettes in the oven according to the instructions on the package - for about 8-10 minutes (do it in the last minutes of cooking the soup so that you can serve the hot baguettes and the delicious soup at the same time).

Put most of the coriander leaves in the soup and puree the soup until smooth.

Finely chop the parsley leaves and sprinkle with the cream soup.

Pour the soup into 4 bowls and put 1 teaspoon of cream in each. Garnish with coriander, sprinkle with black and red pepper.

Serve immediately with warm baguettes.
