How To Cook Casserole With Corn Croutons, Sausage And Green Leafy Vegetables - Recipe

Required products :

  • 9 tablespoons butter
  • 2 tablespoons olive oil
  • 600 grams of raw sausage (use only the inside, which you chop)
  • 1 large onion
  • 2 stalks of celery, chopped
  • 6 cloves garlic in thin slices
  • 2 tablespoons fresh rosemary
  • 1 tablespoon salt
  • 1/2 teaspoon ground black pepper
  • 200 grams of green leafy vegetables of your choice (kale, spinach, etc.)
  • 1 1/2 teaspoon cooking cream
  • 2 1/2 teaspoons chicken broth
  • 3 eggs, beaten well
  • 1 cornbread with buttermilk

Method of preparation :

Start with cornbread with buttermilk, cut it into cubes. Divide it into two pans and bake the croutons until golden - about 45 minutes at 150 degrees.

Increase the oven temperature to 180 degrees.

Grease a suitable deeper pan with oil and set aside.

Fry the sausage in its own fat for about 6-7 minutes, shredding it during this time. Transfer it to a large bowl.

In the same pan add 8 tablespoons of butter and fry onions, celery, garlic, rosemary and season with salt and pepper. When the vegetables soften after about 5 minutes add the green leafy vegetables, cook them until soft.

Add the cream and 1 cup of broth and leave under the lid for about 7-8 minutes.

Pour the vegetables over the sausage and stir, add 1 1/2 teaspoons of broth. Stir in the eggs.

Add the crotons and stir, leave for 5 minutes to absorb the liquids.

Transfer to the prepared pan and put 1 tablespoon of butter on top. Bake under foil for about 20 minutes, then bake uncovered for another 20 minutes.
