Boil the potatoes for 10-15 minutes until soft. Drain and allow to cool. Cut them lengthwise.
In a large pan, fry the bacon until crispy, remove from the heat and add the maple syrup and hot pepper, stir.
Grease a ceramic pan.
In a large bowl, combine the potatoes, bacon, Manchego cheese and green onions (chopped). Transfer the mixture to the pan.
Combine eggs, milk, season and pour the mixture over the potatoes.
Bake for 50 minutes at 170 degrees.
