 Required products :

  • 1 eggplant, cut lengthwise
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 cans of 400 grams of beans, drained
  • 1 can of 400 grams of tomatoes
  • 2 tablespoons tomato paste
  • 1/2 teaspoon cinnamon
  • pinch of black pepper
  • 1 tablespoon butter
  • 2 tablespoons flour
  • pinch of salt and nutmeg
  • 1 1/2 teaspoons fresh milk
  • 2 1/4 tea cups dried bread crumbs (about 3 slices)
  • olive oil

Method of preparation :

Spread the eggplant on both sides and bake for 4-5 minutes on high heat, then turn and bake on the other side at the same time.

Fry onion and garlic for 4-5 minutes until soft. Add beans, canned tomatoes, tomato paste, cinnamon and pepper. Bring the mixture to a boil, then reduce the heat and simmer for 10-15 minutes to thicken the sauce.

Melt the butter in a saucepan, add salt and flour and stir. Add fresh milk and nutmeg. When the sauce thickens, remove from the heat.

Grease a small pan with olive oil and put half the eggplant. Put bean sauce on top. Add the remaining eggplant and carefully pour the white sauce.

Spread the bread crumbs with 2 tablespoons of olive oil and pour over the white sauce.

Bake at 175 degrees for 35 minutes.
