How To Cook Cauliflower Puree With Turmeric And Fried Chickpeas - Recipe

Replace mashed potatoes with cauliflower. Enhance the taste and its useful properties with turmeric, and for crispiness add fried chickpeas.

Required products :

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1/2 teaspoon porridge
  • 1 head of cauliflower
  • 1 1/2 teaspoons turmeric
  • 4 teaspoons water
  • salt and pepper
  • 1/2 cup canned chickpeas
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika

Method of preparation :

Heat a tablespoon and a half of olive oil in a pan and fry the onion in it until soft.

Add the cashews and fry for 1 minute. Add the cauliflower, chopped into small pieces and season with 1 tablespoon of turmeric.

Fill with water and simmer for 20 minutes until soft. When the cauliflower is cooked, remove from the heat and season to taste with salt and pepper. Mash or use a food processor to make a puree (if your appliances are plastic, wait for the vegetables to cool just before pureeing).

Heat the remaining olive oil in a pan and fry the chickpeas, seasoned with cumin, a little turmeric and smoked pepper. When the beans turn golden, remove from the heat.

Serve the puree sprinkled with fried chickpeas.
