Required products :

  • 3 tablespoons butter
  • 3 1/2 tablespoons flour
  • 1 cup fresh milk
  • 1 teaspoon Dijon mustard
  • 1 pinch of cayenne pepper
  • 4 egg yolks
  • 5 proteins (cold)
  • 1/2 teaspoon cream tartar
  • 85 grams of grated Gruyere cheese
  • grated parmesan for sprinkling

Method of preparation :

Preheat the oven to 200 degrees (if you want the souffle a little more liquid, turn it to 190 degrees).

Grease a ceramic round pan with oil and sprinkle with Parmesan cheese. Refrigerate the bowl for as long as you need.

Melt 3 tablespoons of butter in a saucepan, add the flour and stir to obtain a paste. Fry for 1 minute until lightly golden brown. Start pouring the butter, stirring constantly until a smooth texture is obtained.

Let the sauce simmer to thicken, stirring constantly - about 3 minutes. Season with salt and pepper, then transfer the sauce to a cold bowl and cool slightly.

Add the mustard and hot pepper to the sauce, then add the yolks one at a time, stirring well after each. Set the mixture aside.

Using a mixer, beat the egg whites with the tartar cream until soft peaks are obtained. Add 1/3 of the egg whites to the yolk and flour sauce and stir. Put in this sauce and Gruyere cheese, then the remaining egg whites.

Pour into the prepared pan and bake at 200 degrees for 30-35 minutes.

Serve the souffle warm.
