Learn how to cook "Cheese souffle with eggs and green onions". Delicious recipe.
Required products (for 6 servings) :
45 grams of butter + spread
45 grams of flour
300 milliliters of milk
60 grams of grated yellow cheese
2 tablespoons chopped fresh green onions
3 eggs
60 grams of grated Parmesan
300 milliliters of high-fat cooking cream (with the highest possible fat content)
salt and pepper to taste
Preparation :
Melt the butter in a saucepan, add the flour and let it cook for a minute. Remove from the heat and pour the milk gradually, stirring. Then put it back on the stove and let it boil until it thickens, stirring constantly.
Remove the pan from the heat again and add the grated yellow cheese and chopped green onions. Add salt, spices to taste and egg yolks.
Beat the egg whites until you get a thick but not "dry" foam. Put 1 tablespoon of them in the prepared mixture, stir, then add the remaining amount.
Grease 6 molds with oil and distribute the mixture in them. Put them in a pan or other suitable container in which you pour boiling water, the quantities of which reach the middle of the bowls.
Bake the souffle in a preheated 220 degree oven for 15-20 minutes until golden and elastic to the touch. Leave for 5-10 minutes, their volume will drop by about 1/3.
Grease a suitable baking dish with oil, sprinkle the bottom with half of the grated Parmesan cheese, then arrange the contents of the tins (carefully remove it from the dishes with a spatula). Season the cream with salt and pepper and pour it over the dish. Sprinkle with the remaining Parmesan cheese and return to the oven for another 15-20 minutes (until golden).
Garnish with chopped green onions and serve.
