Required products :

  • 1 cup graham crackers
  • 60 grams of soft butter
  • 5 tablespoons sugar
  • 450 grams of cream cheese
  • 2/3 tea cup sugar
  • 1 tablespoon flour top
  • 2 eggs
  • 1/2 cup sour cream
  • 2 teaspoons lemon juice
  • 1 teaspoon liquid vanilla

for the sweet:

  • 1/2 teaspoon sugar
  • 170 grams of raspberries

Method of preparation :

Grind the crackers in a food processor. Add 5 tablespoons of sugar to them.

Mix the butter with a fork and mix it with the crumbs.

In a tray with a falling bottom and a diameter of 20 cm, pour the mixture and press it on the bottom of the dish.

Bake the marshmallows for 10 minutes at 170 degrees (in a preheated oven). Allow to cool while you prepare the cream.

Beat the cream cheese, remaining sugar, flour until fluffy.

Add the eggs one by one, beating well after each one.

Add the cream, lemon juice and vanilla, then mix with a mixer for the last time while combining the products.

Pour the cream over the marshmallows and bake for 45-50 minutes until the center of the pastry is firm (when shaking the pan, the middle should stand still).

Run a knife along the edges of the cheesecake with a knife to peel it off the walls of the dish. Allow to cool to room temperature, then refrigerate.

Put the raspberries and sugar in a saucepan and cook for 8-10 minutes until the jam begins to thicken.

Carefully remove the cheesecake from the mold and using a pastry cutter with the desired shape, cut out the maximum number of molds.

Spread the bites with a thin layer of jam and refrigerate for a few hours, then serve.
