Preheat oven to 180 degrees. Blend the chocolate biscuits until they crumble. Transfer them to a bowl and mix with the melted butter. Pour the mixture into a pan and distribute evenly on the bottom. Bake for 8 minutes until the crust is firm. Remove from the pan and allow to cool completely. Reduce the oven temperature to 120 degrees.
Blend the raspberries until smooth with 1 tablespoon of sugar. Strain through a fine sieve and discard the solids. Beat the cream cheese and the remaining 1/4 cup plus 1 tablespoon of sugar with an electric mixer on medium speed until smooth. Add the eggs and yolks one at a time, beating briefly after each addition.
Pour the flour, vanilla and white chocolate in succession, beating constantly, until the mixture is homogenous. Distribute it evenly on the cooled base. Garnish with raspberry mixture and decorate with a stick. Bake until the edges are slightly golden or for about 1 hour and 15-20 minutes. Allow to cool completely, cover with foil and refrigerate for at least 2 hours, then cut the cheesecake and serve.
