Grind the shortbread cookies and mix them with the cocoa and soft butter.
In a deep bowl, place two strips of parchment paper crosswise, about 5-7 centimeters wide and long enough to pass through the walls and bottom of the bowl and the edges to come out.
Grease the form with oil and pour the biscuit mass into it. Ram it by forming small boards.
In a bowl, mix the cottage cheese, egg yolks, powdered sugar, cream and add a pinch of vanilla. Beat the combination with a blender, the lumps of cottage cheese should be broken. Pour the vanilla pudding over the curd and stir.
Beat the egg whites (to cool) to "hard peaks" with a pinch of salt (use a mixer), gradually adding the powdered sugar. Then gradually combine them with the curd and thoroughly mix the combination with movements from top to bottom.
Pour 1/4 or 1/3 of the cream on the biscuit tray and arrange a few gingerbreads on top. Pour the remaining cream over them and bake for about an hour.
Then, using parchment strips, remove the cheesecake from the pan.
