How To Cook Chicken Breast With Roasted Pumpkin, Broccoli And Sauce - Recipe

Required products :

  • 1 kg of diced nutmeg
  • 4 cups broccoli florets
  • 3 tablespoons olive oil
  • 1 tablespoon fresh thyme or 1 teaspoon dried
  • 1/2 teaspoon salt
  • 450 grams of chicken breast cut into pieces
  • 1/2 head onion, chopped
  • 3 cloves garlic, chopped
  • 1/4 cup chicken broth
  • 1/4 cup Dijon bitterness
  • 2 tablespoons dry white wine (optional)
  • 1/4 cup parmesan cheese, grated
  • 1 tablespoon fresh parsley, chopped

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 200 degrees.

In a bowl, mix the pumpkin, broccoli, 1 and 1/2 tablespoons olive oil, thyme, salt and pepper to taste and stir. Pour the combination into a pan covered with baking paper and bake on the lowest row of the oven for 15 minutes. Then stir, return to the oven and bake until the products are soft and browned.

Arrange the chicken in another pan covered with baking paper. Season with 1/2 tablespoon olive oil and salt and pepper to taste and stir. Bake on the top row of the oven for 14-18 minutes or until done.

Heat 1 tablespoon olive oil in a small pan and fry the onions until soft, stirring often. Add the garlic and cook for 30 seconds, stirring. Pour the chicken broth, mustard and white wine (if using) and let the liquid simmer quietly for 2-3 minutes, stirring often. Add parmesan, parsley and stir the sauce.

Serve the chicken and vegetables in 4 plates, garnish with sauce.
